This is an American original.1 package rapid-rise active yeast (1/4 ounce)1 cup warm water, between 105 to 115 degrees F1 teaspoon granulated sugar2 1/2 cups flour1/2 cup yellow cornmeal1/4 cup olive oil1 pound shredded mozzarella cheese1 pound cooked Italian sausage, crumbled1 (28 ounce) can diced tomatoes, well drained1 teaspoon dried sweet basil1 teaspoon dried oregano1/2 cup grated Parmesan cheeseIn the mixing bowl add the warm water, yeast and sugar, stir with a whisk. Heat another tortilla and place on top of the first, followed by another dipper of sauce and cheese. Continue in this manner until you have as many on the plate as one person wants. A usual adult will start with three or four stacked. For the final layer, add lettuce, tomatoes and onion along with sauce and cheese. Some people like to have the vegetables in between the layers also. I always use “Grandma Vinny’s Sauce.”**Use Ronzoni or another premium brand.***I’ve tried both sliced and shredded and find that thinly sliced works best.Ladle a small amount of sauce (just enough to cover the bottom) into a Pyrex baking dish. Spread it around so the entire bottom of the dish is covered lightly. Dip lasagna noodles into sauce so each is covered with a thin layer. Put one layer of sauce-covered noodles in the dish. Dot all over with the ricotta. Cover with a thin layer of mozzarella. Cover with a thin layer of sauce. Repeat with another layer of sauce-covered noodles, ricotta and mozzarella until you run out of room–usually about 2 to 3 layers, ending with a layer of noodles. For the top layer of noodles, spread a little extra sauce on top. This layer will burn unless it’s completely covered. Cover the dish tightly with plastic wrap. Use two pieces, one on either side and meeting in the middle, if necessary. Microwave on HIGH for 10 minutes, turning dish once. Turn dish again and microwave at 50% power for 30 minutes, again turning dish once during the cooking.Carefully remove plastic wrap and allow lasagna to rest for 5 to 10 minutes before cutting and serving.NOTES: My tendency was to use a lot of sauce and cheese to make this dish as rich as possible. This is a mistake. Be sparing with the sauce and the cheeses and the lasagna will hold together beautifully and cut easily. Start with 2 cups of FRESH store bought Cultured Buttermilk.2. Let the 2 cups of buttermilk reach room temperature (70 degrees F/21 degrees C).3. Then allow the buttermilk to ripen for about 6-8 hours. (Store bought buttermilk does not have a high enough concentration of bacteria to serve as a starter culture without ripening.)4. The resulting buttermilk will be much thicker and sour then what you started with. It should have the consistency of fresh yogurt, if it doesn’t let it sit a few more hours.5. Pour this culture into a full sized CLEAN ice cube tray and put into your FREEZER. As with all steps of cheesemaking, cleanliness is of utmost importance.6. Once frozen, remove the cubes and put into a CLEAN sealed container or plastic freezer bags. It is a good idea to label the container to distinguish it from your thermophilic culture.7. The resulting ice cubes are each 1 ounce of mesophilic starter.8. Add these cubes (thawed) to your recipes as required. The cubes will keep for about one month.To make more starter simply thaw one cube and add into 2 cups of fresh milk. Mix thoroughly with a fork or a whisk.
